Back to school

What is the best way to start off the new school year?  With something sweet of course :) Last year I baked cute little apple cupcakes for the teachers I work with, so I had to do something this year as well.  In keeping with the apple theme, I made Oreo truffle pops.  I dipped each pop into red candy coating and used a big round green sprinkle for the leaf.  They turned out pretty cute.  Our theme for this school year is "Simply the Best" so I also made tags that I attached to each pop.  They were fun and easy to make and I hope to be able to start making more of these.  They would be great with any party theme.

Java Chip Cupcakes


Although I am not a coffee drinker, I love coffee ice cream! Let me rephrase...I love coffee ice cream drizzled with chocolate syrup! So this week I have combined these two to make a great tasting cupcake, that could even be eaten for breakfast :)

 I did cheat this week and use a box cake mix..Duncan Hines (which I think is the best out there) and I added 1 1/2 cups of chocolate chips.  For the frosting: cream cheese, butter, 2 tbsp. of irish cream coffee and powdered sugar.  This icing tops my list as one of the best tasting icings that I have had.  The flavor is hinted with coffee, but not too much.  If you wanted a stronger coffee flavor, just increase the amount you put in.  Hope you enjoy the pictures :)

Refreshing Cupcakes on a hot summer day....

This weeks cupcake recipe was one requested by my husband: French Vanilla Pink Lemonade Cupcake with Pink Lemonade Cream Cheese Frosting.....and since we live in Florida what better that lemonade to cool you off on a hot and humid summer day :)  Enjoy!

I was a little disappointed when these came out of the oven.  The middle sunk in and the cake stuck to the side of the paper.  I am going to have to find a way to fix that next time.  Even so, these cupcake have good flavor.
