Cupcake Wednesdays.....Key Lime Cupcakes with White Chocolate Buttercream icing

It's that time of the week again....Cupcake Wednesday :)  I have been doing a lot of thinking about what kinds of recipes to try each week.  This cupcake was made in memory of our trip two summers ago to Key West.  We had such a great time that I thought I could recreate the feeling with Key Lime cupcakes.  I found this recipe on Southern Living's website and have adjusted it a little.  The recipe was pretty simple and did not take long to make.  Once again, my girls were excited to help.........

This chocolate birthday cake is for my wonderful mom! She is the best and has reminded me more than a few times that her favorite flavor cake is chocolate....hope she enjoyed it :)

Cupcake Wednesdays.....S'mores Cupcakes

 It has been a while since we have had s'mores at our house so we will begin Cupcake Wednesdays with just that....S'mores cupcakes.  My daughters love to help me in the kitchen so of course they were super excited when they got up this morning.  We started with mixing the devils food cake....

...then when we were done we filled up the cups and put them into the oven and waited.

 18 minutes later they were done and our house smelled so sweet :)

The next part was to make the icing:  Marshmallow Buttercream
toppings:  Crushed graham crackers and  a piece of Hershey's chocolate.

The girls enjoyed them too :)

So, the first Cupcake Wednesday was a SUCCESS!!!   Next week's recipe....Key Lime cupcakes :)

Cupcake Wednesdays.....

So one of the BEST parts of my job is that I still get a summer vacation :)  And that means that I am fortunate to spend the entire summer at home with my beautiful daughters, what could be better right?

I have been baking pretty regularly lately, and I thought since I have the time now I would like to try a new cupcake recipe each week.  Deciding on a day was relatively easy....Monday and Tuesday start the week and cupcakes would definitely be gone by the weekend, and Thursday and Friday I usually am baking anyway.  Wednesday was the obvious choice for two reasons: 1.  It is hump day.  The middle of the week and it seems to go by so slowly when I am at work.. and 2.  What could be better than cupcakes in the middle of the week :)  I will call it Cupcake Wednesdays and by the time school starts up again I will have at least 7 new recipes!

My husband and daughters will be my official tasters, I know they will be super excited since I don't always bake just for us.  Where will all of the other cupcakes go?  Not quite sure but I know I have some neighbors who would be willing to taste test if they had to :)  I am excited to start tomorrow....will post some pictures when I get done.
